Getting Ready for Chanukah: Recipe Edition
It's December 1st! That means only 19 days till the Festival of Lights, Chanukah, starts. So we will periodically be posting some fun ideas and stories related to the holiday over the next few weeks to get us ready.
Our first helps answer the age old question: How many things can we fry in oil for this holiday? Well, check out this recipe for Samosa Latkes, which combines the Indian fried treat with a traditional potato latke. Enjoy!
INGREDIENTS
3 baking potatoes, peeled and shredded
1 medium yellow onion, diced medium
10 oz. frozen peas (usually 1 small box)
1/4 cup matzo meal
2 eggs, beaten
1/4 tsp curry powder
1 tsp kosher salt
Cooking spray OR olive/grapeseed oil
-Mix all of the ingredients together well in a large bowl.
-FOR BAKING: Preheat the oven to 350 degrees. Spray cooking spray in a non-stick sautee pan. Shape the latkes using about 1/4 cup of batter for each and brown on both sides. To finish them up, bake them in the oven for 15-20 minutes
-FOR FRYING: Same as above except once the latkes are shaped, toss them in the oil and fry until they are golden brown and cooked through.
-Serve with a yogurt sauce or even sour cream!
